Full day courses give us the scope to cook a wide range of dishes on a theme or a particular culinary style. Harmony House cookery workshops cover similar themes but concentrate on specific dishes or techniques. choose from the following courses:

Dessert at cookery school

Magnificent Meals in minutes
Do you have a busy lifestyle, or are you a novice in the kitchen? Do you need ideas to produce healthy meals quickly? Yes. Then this full day course is for you. Learn shortcuts and ways to cheat, without resorting to a packet or tin. Quick and easy recipes including pate, stir fries, encroutes, en-papilotte, pasta dishes, mousses, Hot sponges & fools.  

Friends for Dinner//Seasonal Entertaining
All these courses are either world cookery or seasonal days. Ideal for entertaining at home and for those with some experience in the kitchen. They are designed to be easy to prepare, look stunning and leave you time to enjoy your guests. All the recipes can be adapted and embellished! Recipes include salmon quenelles, soufflé's and meringue roulade, chocolate caraque, French flan pastry, 3 tier fish terrine and avocado prawn soufflé. Add to your repertoire of entertaining, using ingredients you might shy away from.
We provide you with the freshest produce (local were available). Delight your friends on warm summer evenings with a selection of light and fruity summer foods (indoors) for example chicken with watercress, ice creams and cheesecakes, barbeque idea and cold buffet ideas. For the winter we will be making warm rustic and earthy foods using root vegetables and pastry. With a little hint of chocolate for winter indulgence!

Entertain with Confidence
A course for more proficient cooks, giving you the opportunity to learn new techniques and skills and to build a repertoire of new recipes using the foods in season. Perfect for entertaining dinner party style, preparing quickly but presenting with proficiency.

Vegetarian
Butternut squash & courgette ravioli with sage butter, leek and orange roulade, roast beetroot and cumin risotto. Asparagus and corn frittatas, roast garlic and sweet potato soufflés and  Homemade pesto, Gougere with roast peppers, tartleflec, and delicious desserts to enhance your cookery skills and to improve your repertoire.

Fish cooking
A day with oceans of fish starters and main courses with dessert thrown in! Learn how to fillet and skin fish. Recipes include  Three fish terrine, Monk fish or red mullet with fennel & orange or Scampi Provencal, Sea bass Vierge, or with asparagus veloute and scallops, Pan-fried Mackerel with chilli, coriander and ginger, smoked Haddock Florentine or Marinated  salmon fillets with leeks, beans and Hollandaise.

One for the boys
A day of cooking what men love to eat, so they can reproduce these delicious dishes for you. Recipes include a selection of chicken liver pate with onion marmalade, pork fillet with sage cream and caramelised apples or Gingered garlic lamb or Steak Diane, or beef en croute, Timbale of rice, Frangipan, sticky toffee pudding or chocolate mousse.
All Harmony House Cookery School courses include quick and easy recipes. With expert tuition and tips Hilary will show you how to adapt recipes to create your wonderful original dishes.

Cookery Workshops

Concentrate on a specific topic. We have an informal lunch from what you make. Baking, cupcakes and chocolates are divided between students for taking home.

Starters & Desserts
When you are planning your meals do you always wonder what to do for something new? On this course you will build a new repertoire of hot and cold recipes to include some of the following and more - smoked haddock & chive soufflé, salmon & prawn quenelles, 3 tier chocolate terrine, pannacotta, crème caramel, meringues & roulades

Novice cooks/New to cooking
Knock up some easy, quick recipes with tip and hints to help your confidence in the kitchen. Throw away those packets of ready meals and take aways and say hello to paella, stroganoff, curries, Thai fishcakes, sauces and soups, Gooey chocolate pudding, tiramisu, cheesecakes

Fish and Seafood workshop
Learn how to skin whitefish and fillet oily fish, make smoked fish Mornay, lime & coriander fish cakes, fish pie toppings, Hot & cold seafood starters, salmon quenelles.

Survival Cooking for Students
A day of how to budget, cook healthily and frugally, easy tips and food safety. Seafood Pasta, sweet & sour pork, honey & orange chicken, risotto, egg fried rice, cassoulet, beef stir fry, brownie & white chocolate mousse are some of the dishes you will turn your hand to with confidence.

Vegetarian
New ideas for vegetarian cookery – potato gnocchi, dahl, aubergine & ricotta rolls, lemon & asparagus risotto, potato, camembert and tomato bake, 3 cheese  soufflés , wild mushroom goujere

Chinese & Thai
A selection of Cantonese or sweet & sour chicken, Singapore noodles, prawn & pineapple thai curry, Thai chicken curry, crispy pancake rolls, Thai crab cakes  to make and eat.

Pasta pizza and pasta sauces
A new course for those wanting to make their own pasta, use the machine and then learn a variety of sauces to go with it. Then make your own pizza or stromboli or foccaccia breads learning breadmaking skills with yeast. You will never buy a pizza again once you have made your own. Finish it off with a Tiramisu or Italian almond cake.

Special diets
Do you or your family have food intolerances? No need to lose out. A half day of filled with delicious Coelic and dairy free recipes including chocolate sauce, apricot frangipan

Good fast food or good food fast!!

A selection of quick and easy dishes that can be used for evening family meals. Sweet & sour pork, Cantonese chicken, beef with black bean, southern fried chicken, sweetcorn fritters, chicken tikka masal, chilli beef and beans.

Baking
Always wondered how to bake?? Do you buy a lot of cakes and biscuits for packed lunches or do you have a bed & breakfast and want to provide cakes and biscuits? Come along and bake your choice of the following - Swiss rolls, brownies, cakes, Cranberry and brie or apple and cinnamon scones, Devil's food cake, almond & cherry slice, roulades, orange gingerbread, triple choc cookies , lemon drizzle cake and lots more.

Chocoholics
A workshop of everything with chocolate. After making some truffles and pralines you can bake or make a selection of the following - rocky road, triple choc cookies, white choc cheesecake, marbled choc mousse, choc roulade, choc ganache, caraque, boxes and leaves for decoration

Christmas cooking
Cooking for a crowd – Ideas and cheats to cater for and serve larger numbers including buffets, canapés and savouries, - chicken & apricot roll, dressed salmon trout, blinis, filo parcels, meringues and easy desserts
Boning a turkey - Learn how to bone & stuff your turkey and more. Make carving easy for the man of the house. Bone and stuff your own chicken, make a Chocolate roulade or Christmas pudding and take them home,

Young Harmony - Children's Cookery
7 to 11 years 10 - 12.30pm £25 per person

Cooking lunch from a selection of meatballs, fishcakes, chicken patties and cannelloni
With chocolate mouse, cheesecake, brownie or fruit pies.
To take home biscuits, cookies or carrot cake buns or a chocolate lolly

10 to 15 years 10 – 2 pm £40 per person

Cooking lunch from a selection of chicken korma and rice, sweet and sour chicken and rice, Italian risotto, chicken breasts with homemade pesto, homemade pasta ravioli, savoury pancakes.
Followed by profiteroles and chocolate sauce, sticky toffee pudding, peach upside down cake, chocolate roulade, frangipani tart or key lime pie.
After lunch we will prepare savoury and sweet baking and decorate cupcakes and make chocolates
 

Family Day 2 hours cooking and baking with mum, Dad or Gran by your side helping. £35 for adult and child together
