Young Harmony - Children's  Cookery Days
Short courses 10 to 12.30 or 1 to 3.30 £25  children and parents welcome  for family days
 

Half-day course 10 to 2 - £40 cook a meal and more
Includes recipe folder, refreshments, ingredients and lunch from the food produced.

Taster evenings £50 each 6 pm to 9/9.30pm
A themed cookery session with supper which you have cooked. Ideal for after work events and corporate entertaining.

From March 2012 all Saturday courses ( except March 31st Mediterranean) will start at 11 am and finish one hour later than scheduled above

Saturday 4th
Simply entertain: Friends for Supper 10 – 3.30pm £90

For those who can cook, but want to increase their repertoire. Dishes will include choux pastry, chicken breast rolled with ham & leek mousse, paprika pork, pear & almond frangipani, lemon meringue roulade.

Wednesday 8th
Simply Cook –Great British Baking 10 to 1.30pm £60 or 2 for £100 with light lunch

Baking and re creating homemade cakes and pastries with a touch of nostalgia. Choose from lemon drizzle cake, sponge drops, maids of honour, marbled chocolate cake, Swiss roll, cherry and almond cake, Devonshire scones, date & walnut loaf, coffee cake, orange ginger cake. cheese and chive muffins. Share and take home.
 

Thursday 9th
Simply cook: starters & snacks demonstration 10 – 12.30pm £30 No places available

A demonstration of simple dishes that can be served as a starter or light meal including double baked soufflés, fish cakes & savoury mousses.

Tues 14th – simply fun – children’s day 10 – 2pm over 10yrs
Cook and eat a two course meal. Learn how to make savoury and sweet pastries and quick and easy stir fries to look after yourself.

Simply fun: Chocoholics workshop for all ages 10 – 12.30pm  £25 each or 2 for £40

Have fun with all things chocolaty including posh chocolate drops, chocolate brownies, chocolate mousse and decorating handmade chocolates. Family day Suitable for children from 7 years.

Friday 17th simply cook - Vegetarian pasta workshop for all ages over 14 yrs. £60   10 – 1.30
Make your own pasta, pesto and vegetarian sauces to accompany. Butternut squash and courgette Lasagne fettuccini with orange and coriander pesto, primavera pasta, tortellini with Quattro formaggio sauce and more.
 

Wednesday 22nd – Food hygiene training levels 1 & 2 CIEH. Refreshments provided
Level 1 9.30 – 12.30 - £35
Level 2 9.30 – 4.00 - £55 Optional lunch provided £5 or bring a packed lunch.

Friday 24th
Simply entertain: Friends for dinner 'Retro and classic dinner party' with a twist. 10 – 3.30pm £90
Update a selection of seventies & classic dishes such as coquilles St Jacques, mock crab French onion soup, duck a l’orange, steak Diane or chicken a la king, brandy snaps with lemon mousse, or caramel oranges, marbled arctic roll or crème caramel
 

Saturday 25th – simply cook – hot and comfort desserts 10 – 1.30pm £60 2 for £110
Sticky toffee pudding and butterscotch sauce, chocolate fondants, Orange bread & butter pudding, Queen of puddings, almond and pear frangipani are among the choices to cook
This course together with the retro course can be a residential course

Thursday 1st
Simply cook: Vegetarian workshop 10 – 1.30 £60

New ideas for vegetarian dishes such as mushroom & blue cheese tart, savoury roulades, butternut squash & courgette lasagna, black eye bean patties, onion tarte tatin & aubergine Parmigiano.

Saturday 3rd
Simply Cook – bread making with light lunch 11 – 2.30pm. £60 or 2 for £100

Make your own bread loaves, buns, plaits and then create speciality breads of your choice with a variety of savoury or sweet fillings, foccaccia, soda bread, Stromboli, gorgonzola and walnut, spinach, garlic and parmesan, chilli, olives and tomato, Chelsea buns, cinnamon twists or honey bread
 

Wednesday 21st
Simply cook taster evening Indian  -£50 or 2 for £90 6- 9pm
Cauliflower parathas, samosas, butter Boona beef, chicken tikka Marsala chapatti and more.

Friday 23rd
Simply world - Chinese & Thai workshop 10 - 1.3-pm £60

Includes Thai crab cakes, Thai chicken curry, spring rolls, beef with black beans, sweet & sour chicken.

Thursday 29th
Simply entertain: Seasonal Spring recipes 10 – 3.30pm £90 No places available

Using fresh local produce we will make seared asparagus & Parma ham parcels with hollandaise sauce, rosemary & garlic lamb, spatchcock poussin with a wild mushroom sauce, rhubarb syllabub with walnut shortbread & tarte au citron.

Simply cook: Meals in Minutes 10 – 1.30pm (£60 if booked separately)

Learn shortcuts and ways to cheat without resorting to a packet or tin. Quick and easy recipes including chicken liver pate, beef stroganoff, chicken encroute or en-papilotte, chocolate mousse & hot lemon pond pudding.

Tuesday 3rd
Simply cook taster evening Italian £50 or 2 for £90 6-9pm
Italian cooking – making your own selection of some Italian classics as meat or vegetable lasagnes, cannelloni, Quick pasta dishes with your own pasta, Stromboli bread or pizza, chicken or aubergine parmigiana, and more.

Wednesday 4th
Simply World Cooking: Mexican workshop 10 – 1.30pm £60 No places available

Make fresh salsa, guacamole, chicken enchiladas, sticky chipotle lamb with caramelised corn, green rice, Mexican chocolate pudding.

Wednesday 11th April
Simply Fun: Children's cookery course 10 – 2pm £40 each, 2 for £70.
Suitable for ages 10 – 15

Cook lunch from a selection of chicken korma, sweet and sour chicken, Italian risotto, chicken breasts with homemade pesto, savoury pancakes. profiteroles and chocolate sauce, chocolate roulade or banoffee pie.
After lunch we will prepare savoury and sweet baking and decorate cupcakes and make chocolates

 

Saturday 14th
Pasta and sauces workshop 11 - 2.30pm £60

A morning of making pasta, tortellini, ravioli with various sauces and fillings, gnocchi, risotto marinara, foccaccia bread and torte di almonds or Limon cello

Friday 20th
Simply cook: One for the Boys 10 – 3.30pm £90

A day devoted to cooking all the things men love to eat, including pate with onion marmalade, pork fillet with sage cream and caramelised apples, gingered garlic lamb, sticky toffee pudding. orange & Cointreau bread & butter pudding.

Wednesday 25th
Simply cook: Fish course 10 – 3.30pm £90

Knife skills, filleting and skinning flat, round, oily and white fish will be the first demonstration of the day. Quick and easy starters of mousses, tiâns and dips will be followed by cooking a selection of fish dishes such as Moules marinieres, crab cakes, sea bass & scallops with a leek veloute, sole Florentine, mackerel with chilli and ginger and prawns Provencal together with a dessert.

Friday 27th
Simply fun Chocoholics workshop 10 – 1.30/2pm £60

Make filled chocolates with praline and ganache, truffles and boxes and caraque and compliment that by creating chocolate desserts - choose from chocolate roulade, rocky road, white chocolate cheesecake, marshmallow brownies, chocolate torte

Simply cook – pastry workshop 10 – 1.30/2pm £60 or 2 for £100

Learn to master the art of pastry making from savoury pie to sweet flan and choux pastry, with ideas of how to adapt recipes using Filo. Traditional minced beef or pork and apple pie, French apple or fruit frangipani, profiteroles or savoury Gougere and baklava or filo topped savoury pie.

Including short crust, choux, pate sucree. Using the pastry to make sweet & savoury pies and pastries.

Getting the basics right. Taking you from sauces to soufflés, learn some basic recipes that you can confidently recreate, including sauces for pasta, risotto, fish cakes and stir fries


Saturday 26th
Simply world - America and the Caribbean workshop 11.00 to 2.30pm £60

To cook a selection from prawn gumbo, jambalaya, Creole chicken, steak with chimichurri salsa & onion tart, key lime pie, raspberry New York cheesecake and brownie dessert, devil's food cake.


Tuesday 29th
simply Cook - afternoon tea party 10 to 1.30pm £60 or 2 for £100

With a selection of recipes including, Three tier fish terrine, asparagus soufflé pork paprika, salmon en papilotte with julienne of vegetables and hollandaise sauce, Limon cello yoghurt ice-cream, individual berry and cassis puddings, rippled fruit meringues

Cook a lunch and eat with friends or family choices from chicken and herb or tuna patties and mixed slaw, cannelloni with tomato sauce, chocolate Jaffa pots, strawberry shortbread or lemon honeycomb.
